Check This Blog Out For Cooking Temperatures

In Ontario Canada where I work there is another blog that takes part in the quiz each week that is from here as well. Sous Gal works in the kitchen and is up on this more than I and she goes in depth about cooking temperatures. A lot of it is news to me.

While Sous Gal has her investigation down pat for Canada, the American equivalent is harder to discern. The general consensus is 165 degrees F for pork, chicken, and reheating. But there are so many differentials amongst proteins that taking the FoodSafe course is really essential here.

Ex-Restaurant Manager...you are right it is essential to take the FoodSafe courses that are available.I guess they bumped up the temperature from 140F in many places. It matters most that the food is still hot when it reaches the table and not sitting on the pass cooling off.

When I was a kitchen worker in a summer camp in 2000 I hardly remember our chief cook paying much attention to the temperature at all...
