My mother loved Sweetbreads and I used to fix them for her every week.
A Tarte Tatin has less to do with apples, and more to do with the method of preparation and presentation. Many fruits can be used.

Bulletholes...true what you say about the tarte tatin as any fruit base can be used. Apple is pretty much the most popular though I would say. How is it going? Nice to hear from you.
