Bring Back the Pepper Mills Please

Where I work last night management decided to hide some salt and peppers that we normally put on the table upon the guest's arrival. Whether they have ordered their food or not nearly all the time at one point in the meal one or the other will be used to sprinkle over their food.

Well now we are told they have to order their appetizer first before we can put them on. So management decided we didn't need all the salt and peppers that were available previously to us for all the tables. So everyone was hunting for salt and peppers to put on the table when the rush came and there wasn't enough to go around.

Being questioned as to the appropriate time to deliver the salt and pepper I piped up to say that out of my 3 tables that are eating right now only one has a salt and pepper. But no I had to answer the question right first then mention again that I didn't have salt and pepper for all my tables who were eating.

Why on heaven's earth did management choose to make service difficult especially when upon the guest's request for salt and pepper did I had to go to a neighbouring table to see if they were done with theirs' so I could pass it on. Is this confusing already? Cause I am baffled.

If this is the way to go then we may as well go back to the pepper mills we had before the salt and pepper shakers came into being 9 months ago. I mean really how stupid is it really to be running around looking for the S and P when you should be doing other really important things like providing real service to the guest.

Now I still made some good money last night and maybe tonight there will be enough S and P for every table but if we have to tip management out the least they can do is make sure we have the equipment necessary to ensure guest satisfaction.

I mean really.....

Just because you're management doesn't mean that you actually know what you're doing? Hey wait, I'm management...

Banquet Manager...you should have seen what happened last night. I am hoping she calms down a bit cause after last night she is creating a lot of tension for nothing. I am not even looking forward to going in tonight. It is funny or not how some people given a postion of power can let it go to their heads. She is ruining a good thing where I work. I am concerned. I know you are a fine manager because from your blog you care about the right things. Like the guest for starters.

i didn't know that Salt &Pepper had gotten that expensive!
i remember my first Chef job I ordered some kind of bulk ketchup thing where we would refill Ketchup bottles from bulk.
I thought of all the money I would save on Ketchup, not realizing how nasty a Ketchup bottle can get after a couple months of use.

And besides that, weere a Steakhouse and probably only went through about two bottles a week!
What a savings!

Bulletholes..it hasn't got that expensive. Initially it was we went from the pepper mills to the shakers but people were stealing them. So now we cannot put them on the table until the guest arrives but my quibble is what difference does it make once they have arrived when we put them on the table. The manager was saying that we cannot put them on till they order their appetizer. Well dang me at some point they will use them won't they? So to make a long story short there wasn't enough S and P for one sitting in the DR so we were trying to find them when we needed them and there were none around. I call it a stupid way to ask staff to do something. Majoring on the minor things I say.

the best retort is "sir, the food is already properly seasoned!"

Mike...that is true chefs hate anything to do with people loading up on S and P or sauces etc don't they.

Another case of management creating unnecessary rules to justify their existence! (not you banquet manager). This is the most ridiculous thing I've ever heard!
